Extra-virgin olive oil is the fat at the foundation of the Mediterranean diet and the most studied individual food component in the PREDIMED trial. Participants in the arm of that trial supplemented with extra-virgin olive oil at four tablespoons per day showed a 39 percent reduction in stroke risk and a 30 percent reduction in major cardiovascular events. These are not modest findings. They represent a therapeutic effect comparable to pharmaceutical intervention.

Oleic Acid and Monounsaturated Fat Benefits

Oleic acid, the primary fatty acid in olive oil, constitutes 55 to 80 percent of its total fat content. It improves LDL particle quality, reduces oxidised LDL, and improves insulin sensitivity. When olive oil replaces saturated fat in the diet, it consistently reduces cardiovascular risk markers. When it replaces refined carbohydrates, it improves both lipid profiles and glycaemic control. The substitution matters as much as the addition.

Oleocanthal and Neuroinflammation

Extra-virgin olive oil contains oleocanthal, a polyphenol that inhibits the same cyclo-oxygenase enzymes targeted by ibuprofen. The research group at the Monell Chemical Senses Center that discovered oleocanthal calculated that consuming 50ml of high-quality extra-virgin olive oil per day provides roughly the equivalent of 10 percent of the anti-inflammatory effect of an adult dose of ibuprofen. Oleocanthal also appears to reduce amyloid-beta aggregation in neuronal tissue, with potential implications for Alzheimer's prevention.

  • Use extra-virgin olive oil as your primary cooking fat for all methods including frying: it is more heat-stable than most refined vegetable oils due to its high monounsaturated content and polyphenol antioxidants
  • Target three to four tablespoons daily to achieve the dose used in research
  • Purchase cold-pressed extra-virgin olive oil in dark glass bottles and store away from heat and light
  • Use it generously on salads, vegetables, and as a finish on cooked dishes
